Tim is a self taught chef with experience in one of the world’s top restaurants, Faviken - as featured in the Netflix series, Chef’s Table. Here, Tim has been able to put his philosophy into practice.
"My philosophy is to join the process of food towards the table as early as possible and then encouraging and sharing that with others. A meal for me starts with the alarm going off for a day's fishing or the digging of a hole for a seed to be planted. Then if you're able to create memories with others along the way; I don't know if the meal really does end, it lives on in those memories." says Tim.
