Skirt steak is a coarse grained steak with a rich flavour and generally sourced from the flank area.
How to Cook:
The skirt steak is commonly used in stir-frying but can have a tendency to be chewy. Marinating is a great way to bring out the rich flavour and make the cut more versatile and make it more tender, or you can pan-searing very quickly. They are typically sliced against the grain before serving to maximize tenderness.

Cheryl also suggests if you are short on time, using a dry rub with taco seasoning or fajita seasoning, and just cook the skirt enough so it's cooked through, but still pink inside, then slice crossway in thin slices - you will be in steak taco heaven. Alternatively, make a salad with corn, coriander, red onion, coz lettuce, tomatoes & dressing. Cheryl uses a bit of lite mayo, unsweetened yoghurt, lime juice, a bit more taco seasoning and cholula hot sauce. Give it a try!
